One of our most favorite loaves - this naturally leavened sourdough boasts large amount of whole wheat and rye, wild yeast leaven, prolonged cold fermentation for maximum flavor and texture development, and very hot bake. The result is outstanding: beautiful chestnut color crust and latte colored crumb full of irregular holes which trap the flavor inside. Robust, chewy and delicious, this bread will make an excellent sandwich. Try it in fondu or dipped in oil.
